Recipe for Moccamaster
COFFEE: 33G WATER: 550G
Prepare the filter for the Moccamaster;
Wet the filter with water so that it adheres well to the surface;
Discard any server water that has been used to wet the filter;
Pour 550g of water at room temperature into the tank;
Moi 33g of coffee - medium/fine grind - a little larger than granulated sugar;
Pour the coffee into the server and make a hole in the center with a small spoon so that the water can soak up all the coffee as quickly as possible;
Turn on the Moccamaster;
30″ after the first contact with water, wrap the coffee with a spoon to make the extraction more uniform and remove some of the CO2 present in the coffee;
When there is no more water in the tank, gently shake the portafilter to settle the coffee bed;
Serve as soon as the extraction is finished.
PRO TIP: To make half the recipe, grind the coffee finer and keep the ratio.
