Recipe for Moccamaster

COFFEE: 33G
WATER: 550G

  1. Prepare the filter for the Moccamaster;
  2. Wet the filter with water so that it adheres well to the surface;
  3. Discard any server water that has been used to wet the filter;
  4. Pour 550g of water at room temperature into the tank;
  5. Moi 33g of coffee - medium/fine grind - a little larger than granulated sugar;
  6. Pour the coffee into the server and make a hole in the center with a small spoon so that the water can soak up all the coffee as quickly as possible;
  7. Turn on the Moccamaster;
  8. 30″ after the first contact with water, wrap the coffee with a spoon to make the extraction more uniform and remove some of the CO2 present in the coffee;
  9. When there is no more water in the tank, gently shake the portafilter to settle the coffee bed;
  10. Serve as soon as the extraction is finished.

PRO TIP: To make half the recipe, grind the coffee finer and keep the ratio.
