Medium-fine (finer than Clever, coarser than espresso).

Temperature: 92–93 ºC

  1. Prepare the Aeropress using the inverted method and rinse the filter.
  2. Place 16 g of coffee in the chamber.
  3. 0:00 – Pour 220 g of water in 10-12 s, ensuring total saturation.
  4. Stir gently 3 times.
  5. Let it soak until 1:30.
  6. Put the lid with the filter on and turn at 1:40.
  7. Press down constantly for 25-30 s. Stop when you hear the “hiss.”.
  8. Serve immediately.

Expected profile:
Medium-high body, ripe red fruit (cherry), tropical acidity (passion fruit), deep sweetness like chocolate liqueur and marmalade, long finish.

PRO TIP: If you want more juiciness and less weight, add 20-30 g of hot water (bypass) after pressing. This will open up the passion fruit and quince without diluting the sweetness.
