Recipe for cappuccino

INGREDIENTS

  • 18g coffee
  • 150ml milk or vegetable barista drink

PREPARATION

  1. Extracts 40g of espresso for a 200/250ml ceramic bowl;
  2. Pour the milk or vegetable drink of your choice (use only "barista" editions as they contain the amount of fat needed to create the right creaminess) into a milk jug, no more than the top of the jug;
  3. Place the steam lance of your espresso machine just below the surface of the milk you have poured into the milk jug;
  4. When you start steaming, the sound should be similar to wood crackling in the fireplace or sheets of paper tearing. Try gently lowering the milk jug if it's not making any sound. The more sound the milk makes, the more voluminous your steaming will be;
  5. Control the temperature of the milk by placing a hand on the milk jug while steaming. The ideal temperature is between 50 and 60 degrees Celsius.
  6. Alternatively pou can use an electric milk frother (first heat the milk in the microwave or on the stove, and be careful not to boil it), or pour the warm milk into a French press and then vigorously plunge the filter up and down to push the air through the milk and create foam;
  7. Gently pour the steamed milk over the espresso.
