Recipe for Kalita wave 185

COFFEE 12g
WATER 200g

  1. Heat the water to 96ºC;
  2. Prepare the Kalita, filter and server. Wet the filter with water so that it adheres well to the surface;
  3. Grind 12g of coffee with a medium/fine grind - a little more than granulated sugar;
  4. Discard any server water that has been used to wet the filter;
  5. Place the ground coffee in the filter and pour 50g of 5″ water over the coffee. Make sure the water covers all the coffee;
  6. Wait for up to 1′ of infusion.
  7. Then, every 30″, pour 50g of hot water over the coffee until you reach 200g in total, at 2'.
  8. It works when there is no more water on the lees.

PRO TIP: Want to make the drink more intense? Instead of 12g of coffee, add 15g and stick to the recipe.
