Recipe for Chemex

IN 50G - OUT 850G

  1. Heat the water to 96ºC;
  2. I ground 50g of coffee with a coarse grind;
  3. Pour the 50g of ground coffee into the Chemex with the pre-soaked filter (make sure you don't cover the coffee spout so that the water leaks out);
  4. Place the Chemex on a scale and start the stopwatch while adding 150g of water for the first 15";
  5. At 1' add up to 350g of water;
  6. At 2' add up to 550g of water;
  7. At 3' add up to 850g of water;
  8. If there are any pieces of coffee stuck to the top of the filter, shake the chemex slightly so that the coffee bed is even.

PRO TIP: Uuse a kettle with a gooseneck to control the flow of water. The flow should be around 8g per second.
