Recipe for Chemex

COFFEE 50g
WATER 800g

  1. Heats the water to 98ºC;
  2. Prepare your Chemex, filter and server. Wet the filter with water so that it adheres well to the surface. Make sure that the Chemex nozzle doesn't get blocked by the filter - that's where the air can circulate;
  3. Grind 50g of coffee - coarse grind (a little finer than coarse salt);
  4. Discard any server water that has been used to wet the filter;
  5. Pour the ground coffee into the filter and pour at least 100g of water over 15".

  7. Pours water up to 275g at 1', with circular movements, at a speed of 6 grams of water per second;
  8. Pours up to 450g of water over the coffee at 2', with the flow in the center, at a speed of 6 grams of water per second;
  9. Pours water up to 625g at 3' with circular movements, at a speed of 6 grams of water per second;
  10. Pours water up to 800g at 4' over the coffee, with the flow in the center, at a speed of 6 grams of water per second;
  11. Gently shake the Chemex in a circular motion to settle the coffee bed;
  12. This is useful when the coffee grounds have no water in them.

PRO TIP: The larger the amount of coffee, the coarser the grind. Want more drink? Adjust the amount of coffee, but don't forget to adjust the grind as well.
