Recipe for espresso

IN 18g - OUT 45g

  1. Grind 18g of espresso coffee and place it in the pre-dried filter holder;
  2. Distribute the ground coffee in the filter holder (you can use the WDT but do it superficially);
  3. Use a presser foot to tamp the coffee down evenly;
  4. Release 2" of water flow from the espresso machine unit, then place the filter holder in the unit and start extraction;
  5. Use a scale to weigh out the drink and arrive at the recommended amount. You should extract 45g of drink and the extraction time should be between 25″ and 30".

PRO TIP: WDT (Weiss Distribution Technique) is the technique of distributing the ground coffee with a set of acupuncture needles in the filter holder.
