OREA v3

COFFEE 16g
WATER 255g

  1. Heats the water to 93ºC; 
  2. Prepare the Orea v3, filter and server. Wet the filter with water so that it adheres well to the surface; 
  3. Moi 16g of coffee - medium grind; 
  4. Discard any server water that has been used to wet the filter; 
  5. Put the ground coffee in the filter and pour 55g of water in 10" over the coffee. Make sure the water covers all the coffee; 
  6. Wait until 2'; 
  7. Pour water over the coffee up to 255g, without movement, with the flow aimed at the center at a speed of 6 grams per second, until 2'30.
  8. Then stir in the coffee, making two circular movements with the Orea; 
  9. This is useful when the coffee grounds have not accumulated any water.

PRO TIP: Keep in mind that flow and agitation are elements that will determine the extraction rate. More flow and more agitation increase the extraction rate. Sometimes this alone can determine the success of your recipe.
