Macchiato and Cortado

Base recipe for a macchiato and cut

Macchiato recipe

INGREDIENTS

  • 35-40 grams espresso
  • 100ml milk or vegetable barista drink (you'll only use about 10 ml in the final drink)

PREPARATION

  1. Extract the espresso according to the basic recipe into a ceramic espresso cup or a small 100ml glass.
  2. Then steam the milk or vegetable drink of your choice (only use "barista" editions as they contain the amount of fat needed to create the right creaminess).
  3. Place the steam lance of your espresso machine a little below the surface of the milk you have poured into the milk jug. When it starts steaming, the sound should be similar to wood crackling in the fireplace or sheets of paper tearing. Try gently lowering the milk jug if it's not making any sound. The more sound the milk makes, the more voluminous your steaming will be. 
  4. Control the temperature of the milk by placing a hand on the milk jug while steaming. The ideal temperature is between 50 and 60 degrees Celsius.
  5.  Alternatively, you can use an electric milk frother (first heat the milk in the microwave or on the stove, and be careful not to boil it), or pour the warm milk into a French press and then vigorously plunge the filter up and down to push the air through the milk and create foam.
  6. Remove the top of the steamed milk with a spoon and place it in the cup.

Cortado recipe

INGREDIENTS

  • 35-40 grams espresso
  • 100ml milk or vegetable barista drink (you'll only use about 40 ml in the final drink)

PREPARATION

  1. Extract the espresso according to the basic recipe for a ceramic espresso cup or a small 120ml glass.
  2. Then steam the milk or vegetable drink of your choice (only use "barista" editions as they contain the amount of fat needed to create the right creaminess).
  3. Place the steam lance of your espresso machine a little below the surface of the milk you have poured into the milk jug. When it starts steaming, the sound should be similar to wood crackling in the fireplace or sheets of paper tearing. Try gently lowering the milk jug if it's not making any sound. The more sound the milk makes, the more voluminous your steaming will be.
