Recipe for Allongé (made with an espresso machine)

IN 18g
OUT 90g

  1. Grind 18g of coffee (coarser than for espresso) and place it in the pre-dried filter holder;
  2. Dispenses the ground coffee into the filter holder;
  3. Use a presser foot to tamp the coffee down evenly;
  4. Releases 2" of water flow from the espresso machine unit;
  5. Use a scale to weigh the drink and arrive at the quantity
    recommended;
  6. Insert the filter holder and start extraction;
  7. You should extract 90g of drink. The extraction time should
    around 27".

NOTE: Think of an Allongé as a "well-made abatanado". It has a body between espresso and filter coffee. To me, it reminds me of a cola without the sugar and gas.
